Fermín natural ham is not nitrate-free, but contains naturally occurring nitrates.
Traditional ham is made with artificial nitrates which give it a distinctive flavour and give it a longer shelf life.
You may notice a greyish tinge once you open Fermín natural ham. This is normal as the natural nitrates begin to oxidise. The ham is still safe to eat. The flavour of natural ham is slightly less salty and earthy.
Cutting the ham: Remove the layer of fat from the top and sides of the ham until the meat is exposed. Trim the fat as you cut it. Cut small, very thin slices, including some of the fat which retains much of the flavour. Remember to cut downwards with the knife.
